Glorian Posted January 12, 2016 Author Posted January 12, 2016 (edited) I'll start off with my FAVOURITE meal.Jambalaya.Essentially a mexican risotto.Lot of ingredients, but so worth it. Below is for 4 people (usually a bit left over)2 x chicken breast (Thighs also work)2 x chorizo ring1 x 300g ham joint (Or just some thick ham off the deli)3 x medium red onion3 x mixed pepper5 x garlic cloves2 x tins chopped tomato1 x tin tomato pureeRisotto rice (2-3 cups)Chicken (or veg) stock (2 litres)PaprikaChilliesCayenne pepperSaltBlack pepperWorchester sauceTobassco sauceNow the process- Dice your ham, chorizo, onions, peppers, chicken, and crush your garlic. Cut them to the size you'd like but i tend to go by the following :Ham - 1cm cubeChorizo - slice in half then .5cm wide slicesChicken into strips 2cm by 1cm.Peppers into strips 2cm by 1cmOnions in half. then 3x4 cut-Prepare your stock in a big jug.-Fry your chicken in a BIG pan with some oil-After 5 minutes add chorizo-After 2 minutes add Ham-After 3 minutes add the veg (Pepper onion garlic chopped tomato)-Stir thoroughly-Add the spices (i tend to go FFA cause im dangerous!)Cayenne pepper - 1/2 TBSPChilli - 1/2 TBSPPaprika - 1 1/2 TBSPSalt / pepper to tasteTobassco - 4/5 drops.Worchester - 1 TBSP-Mix thoroughly and add the tomato puree-add the stock and thoroughly stir-bring to a boil and add the risotto rice-Simmer on a low-medium heat for 25-30minutes or untill the rice is cooked.ENJOY!Also its mega tasty as a left over as it soaks up the moisture over night.I tend to guess my spices a bit and make it quite hot cause yum. Arwen Posted January 12, 2016 Posted January 12, 2016 ^^^ I use that one too, it is fantastic I make Slightly Spicy Soup - 2 x Veg stock cubes/pots (to make around 1L of stock)2 x Sweet red peppers2 x orange, red or yellow peppers1 x large brown onion 500ml (or there abouts) of Pasata 1 x small chilli (or large/more to taste)some ginger (I use about 1cm cubed, I love ginger)Use of a handheld blender/liquidiser.Make up the stock in a large pot, once the stock cubes/jelly things has dissolved add the pasata. Bring to the boil and then reduce the heat to a simmer. Chop up the peppers and the onion and add them to the pot. Finely chop the ginger (I would say use about half what I put in initially then adjust to taste on your next pot.) and finely chop the chilli(s) leaving the seeds in according to how much of a kick you want your soup to have. Add to the pot, put the lid on and leave it to simmer for about an hour or so. Once cooked, remove from the heat and liquidise the soup, it wont take much. It should be a bit thicker than the pasata, but is not a chuncky soup. I absolutely love making this in the winter, it properly heats you up! Quote

I do blow my own trumpet because it's one of the few things in very very good at. People ask me to cook if we're gong round to theirs for a meal! I don't mind, it's one of those things in life (aside from bikes) that i love. I shall dig through my recipes and find one that is completely my own creation, is not too difficult to make and which i know you will love!EDIT: Here's a quick one i know from memory, you will never buy tomato sauce in a jar again after cooking this! It is dead easy and quick to make.XmisterIS's tomato sauce:You will need a hand blender and a large lidded pan. That is all. Ingredients:1 tin chopped tomatoes. 2 cloves garlic, peeled.1 stick of celery, roughly chopped. 1 vegetable stock cube. 2 tablespoons red wine vinegar. 2 tablespoons olive oil.Method:Put all ingredients in the blender and blend until smooth.Transfer to the pan, bring to the boil, reduce heat to a simmer and put the lid on. Cook for at least 10 minutes, longer if you want the sauce thicker. Leave to cool when desired thickness has been reached. Keep it in the fridge, you can use it thin as a quick pasta sauce, or you can reduce it right down to a paste and use it on pizza bases, etc. Quote

Yes you do! For anyone who wants to make them.Sweet potato (i use 1 per person usually enough)Preheat oven to 220Cut in half, then into sizes you like. I tend to go no bigger than around 0.7x0.7 cm. but each to their own.Place on a baking tray, pour a little oil over them and toss with your hands till all coatedPlace on the baking tray in order so there is a gap between each chip.Sprinkle sea salt flakes (or just salt if thats all available) and grind black pepperPut in oven for 10-15mins take them out and flip them over, leaving the gap again.10 more minutes, remove and serve.Also if avaliable you can deep fry them for mega unhealthy but tasty yums.
