Hydraulics is hydraulics. I suspect the racing setup is used because it's simpler and cheaper and lighter. Frrom a riders point of view the braided hoses give you more feel on the lever so enabling a finer application of brake pressure. -
Could well be loose battery terminals, which are cured when you replace the battery, thus turning a free repair into a dear one. I speak from experience. Could also be a loose earth strap earth strap.

A fuse is a safety device. It breaks the cicuit if the current being drawn exceeds the stated level on the fuse. Replacing a 30 amp fuse with a 10 amp will not damage anything or hide anything. The 10A may not be able to handle the current drawn on a 30A circuit and blow (open) even if there is no fault. The other way round can cause problems as 30A is able to be drawn through a cicuit , designed for only 10A. Wires may melt. This can happen if a short circuit happens. A short circuit is when the electricity finds an unauthorised short cut back to the battery. Perhaps a wire rubs against the frame under vibration and wears through the insulation, allowing the inner core to touch the frame. What has probably happened to your fuse box is corrosion at the terminals or the fuse holder. This gives a poor connection increasing the resistance and generating heat. Think of electricity as water and Voltage is pressure, Ampage is the amount of water flowing and Resistance is the bore of the pipe. Direct current DC one way round. + is always + and - is always -. One is connected to the frame or body and is called earth Alternating current AC osscillating (vibrating) + becomes - and back again. The wire called earth in this system is a safety route designed to short the system and blow the fuse if it becomes live. It's an easy fix for a time seved bike tech if it's all a bit much for you.

Changing brake fluid front and rear - big job?

Use brand new unopened fluid. Brake fluid is hygroscopic. It absorbs water from the atmosphere. However this is not as bad as having a big job in your brake system. How on earth did it get in there? -
My bike has an oil level light not a pressure warning light. So if the light comes on , it needs a top up. The manual for mine also states to run the engine, turn it off and wait for 2 mins, then check oil level in sight glass. If it hasn't run for a bit, the glass shows it to be too full. Check manufacturers instructions. They're all different, some even have a dipstick.

Correct amount of oil, no noise. Drain some out, whine and click. Don't top it back up properly and soon, no noise at all and a big bill. A motorcycle engine is a highly developed and evolved piece of precision engineering. The amount of the oil in the sump is calculated to keep the engine running in peak condition between service intervals. Put the correct amount of oil in and stop messing about.

Don't wash your bike with detergent. Worse than salt. A cheap supermarket hair shampoo is good. Rusting needs moisture. If the atmosphere is dry then no rursting. Seal the shed and run a dehumidifier

Put an old piece of carpet or a runner under the bike. And wipe your feet.

For non insurance and minor repairs , the best way is to do it yourself, second best is to find a non franchised small shop you trust. Buy a manual , tools etc. Then frequent your local biker pub and make friends with one with the dirty nails. -
They didn't test ride it because replacing a caliper is a very basic servicing procedure. If they can't do that right I'd be going elsewhere.

Dip the whole bike in a tank of paint. The hot bits will burn it off and it will wear off the bits that move.
