Edan Valley Wild Pigeon - seared breast; crispy breaded confit leg; root vegetable and plum 'casserole' parsnip foam

Seared Scottish Scallop - celeriac; apple and hazelnuts

Champagne Sorbet - blood orange jelly and fresh baby spearmint

Pan-seared Cumbrian Venison Haunch - honey roasted heritage beets; chestnut; pancetta and savoy cabbage fricassee; duck fat roast potatoes; honey glazed 'piccolo' parsnips; buttered rainbow chantenay carrots; button sprouts with sage and chestnut butter; port braised red cabbage with apple and fragrant spices

Cumbrian Cheeseboard - Black Dub blue; Eden valley smokie; mature Blencathra cheddar; served with traditional accompaniments plus a shot of ruby port on the side
